Soy Good

Some say tofu tastes like chicken.  We say it’s even better.  Like when it’s used to make these awesome tasting cookies.

Lemon Blueberry Tofu Cookies

Ingredients:
1 cup sugar
¼ cup brown sugar loosely packed
½ cup butter softened
5 oz silken tofu
1 tsp lemon extract
Zest from ½ a lemon
1½ cup flour
1 tsp baking soda
½ tsp cream of tartar
1 cup dried blueberries

Directions:
1.   Preheat oven to 350F.
2.   Cream sugar and butter until fluffy.
3.   Add tofu, lemon extract and zest.  Beat well.
4.   In separate bowl combine flour, soda and cream of tartar.
5.   Mix into tofu/sugar mixture.
6.   Stir dried blueberries into the mixture.
7.   Use a spoon to drop dough onto cookie sheet.
8.   Bake 10-12 min or until edges begin to turn golden brown.
9.   Let cool for about 2 minutes.
10. Transfer to wire rack with spatula.

Extra bonus for bowl lickers – no eggs here, so lick away to your salmonella-free belly’s content.
