Wild Fare
You totally kicked his butt hiking. Feel like adding insult to injury? Demonstrate your multi-dimensional backcountry prowess by whipping up this tasty two course meal. It’s easy to pack and a cinch to prepare. And with the sophistication of this fabulous dinner, he'll think that you beat him back by at least an hour.
Gnocchi with Smoked Salmon
2 packages of potato gnocchi (in pasta section of your supermarket)
2 cups of washed arugula
1 chopped red bell pepper
8 oz cut up smoked salmon
½ cup dry milk powder (or Cream of Chicken soup mix)
1 cup water
1 cup prepared pesto
1. Cook gnocchi in boiling water (approx. 5 min)
2. Transfer cooked gnocchi to bowls
3. Divide arugula, pepper and smoked salmon into the bowls
4. In same pot, heat milk powder (or soup mix) with water
5. Add pesto and stir
6. Top gnocchi with pesto sauce
Pudding
1 package white chocolate instant pudding
12 mint Girl Guide cookies
3 cups water
½ cup dry milk powder
2 oz coffee or almond flavoured liqueur (optional)
1. In freezer bag, dissolve milk powder into the water
2. Add pudding mix
3. Wait until thickened
4. Stir in liqueur
5. Crumble cookies over the top
Extra bonus for making a fabulous dinner…..he cleans.
