Recipe for Success

You beat him up the mountain…and down the other side. And to really demonstrate your backcountry prowess, whip up this tasty two-course meal. It’s easy to pack and a cinch to prepare. And when he finally shows up and greeted with this awesome dinner, he’ll think that you beat him to the campsite by an hour.

Pepperoni Paella
1 cup of instant brown rice
1.5 cup of boiling water
1 chicken flavored bouillon cube
1 ziplock freezer bag

1 onion, chopped
2 cloves garlic, chopped
1 green pepper, chopped
1 red pepper, chopped
14.5 oz can peeled chopped tomatoes
Olive oil
1 cup pepperoni, chopped
½ teaspoon sweet smoked paprika
½ teaspoon saffron threads

1.  Place rice and crushed bouillon cube in freezer bag and add boiling water. Let stand for 10 minutes.

2.  Cook onion, garlic, peppers in olive oil under tender in a pot. Add pepperoni and chopped tomatoes and cook until bubbling.

3.  Add saffron, paprika and cooked rice to pot and stir together.

Optional tasty additions: mushrooms or canned beans

Baked Apples
2 apples (i.e. Pink Lady, Jonathan, Granny Smith)
1 Skor chocolate bar, coarsely chopped
1.5 oz Toblerone bar, coarsely chopped
Pinch cinnamon
Pinch dried ginger
Enough aluminum foil to wrap the apples

1. Core the apples (leave the bottom intact).

2. Sprinkle chocolates, cinnamon and ginger inside core.

3. Wrap with aluminum foil and bake over hot campfire coals for up to 20 minutes, turning every 5 minutes.

Extra bonus for cooking this fabulous dinner…..he cleans.
